Chicken tortilla
Serves
Ingredients
- 1 clove garlic
- 200g chicken breast meat, sliced
- 25ml olive oil
- 6 eggs
- 1 teaspoon sea salt
Method
- Peel and finely dice the garlic and toss through the sliced chicken
- Heat the oil in a medium sized fry pan
- Add the chicken and sauté until cooked through
- Whisk the eggs with the salt and pour into the fry pan with the chicken
- Cook over a medium heat until the tortilla is almost set
- Place a plate over the top of the fry pan and very carefully flip the pan over so that the tortilla falls onto the plate
- Slide the tortilla back into the pan to finish cooking
- Serve with the olive, white bean and orange salad
