Butternut pumpkin in orange

  • 300g butternut pumpkin, peeled and thickly sliced
  • 2 tablespoons honey
  • Juice of 1 orange
  • 1/2 teaspoon ginger, freshly grated or 1/4 teaspoon powdered ginger (optional)


  1. Place pumpkin in an ovenproof dish
  2. Combine honey, orange juice and ginger and pour over pumpkin
  3. Microwave on HIGH (100%) for 5-8 minutes or bake in oven at 180C for 35-45 minutes, or until tender


Variation Substitute sweet potato or sliced carrots for pumpkin
