Calamari with braised radicchio and spinach
Serves 4-6
Ingredients
- 1 red onion
- 2 cloves garlic
- 2 chillies
- 1 small radicchio
- 150g baby spinach
- 50ml olive oil
- vino cotto/balsamic vinegar
- 600g cleaned calamari tubes
- salt and freshly ground black pepper
Method
- Peel and finely slice the onion, garlic and chillies
- Wash the radicchio and spinach and shred the radicchio into 1cm strips
- Heat the olive oil in a large frypan; add the onion, garlic and chillies and sauté until browned and soft
- Add the radicchio and spinach, cook until wilted, drizzle over some vino cotto or balsamic vinegar, set aside and keep warm
- Slice the calamari into rings and sauté in a large frypan over a high heat with a little olive oil for 1 minute
- Season with salt and pepper and then add to the radicchio and spinach mix
- Toss and serve immediately
