roast turkey breast roll with peach, onion and fetta salad

ServesServes 6


  • 50ml olive oil
  • 10cm sprig rosemary
  • 1 rolled turkey breast, approximately 1kg
  • salt and freshly cracked black pepper
  • 2-3 red onions, peeled and quartered
  • 2-3 peaches, quartered and stone removed
  • 3/4 cup crumbled feta cheese


  1. Blend the oil and rosemary until the rosemary is finely chopped into the oil
  2. Seal the turkey roll with a little of the oil in a hot pan to colour the skin then place on a roasting rack in a large roasting tray
  3. Baste with garlic and rosemary oil, season and roast for 45-60 minutes until turkey is cooked
  4. Remove from the oven, cover with alfoil and allow to rest for 10 minutes
  5. After 20 minutes of the turkey roasting add into the roasting tray the onions and peaches
  6. Drizzle over a little of the rosemary oil and continue to roast
  7. Serve the sliced turkey breast with the roasted onions and peaches topped with the fetta and a little rosemary oil drizzled over
