Spaghetti with chicken, broccolini and prosciutto
Serves 4
Ingredients
- 6 slices prosciutto
- 60ml olive oil
- 2 cloves garlic, minced
- 1 brown onion, sliced
- 500g chicken breast, cut in strips
- 200ml chicken stock
- 25g butter
- 500g spaghetti
- 1 bunch broccolini, cut into 5 cm pieces
- Grated parmesan
- Freshly cracked black pepper
Method
- Place 2 slices of the prosciutto onto an oven tray and crisp in a moderate oven for 3-4 minutes
- Cut the other 4 slices into strips
- Heat the oil in a large fry pan and sauté the garlic and onion
- Add the chicken and prosciutto strips and sauté for 3-4 minutes
- Add the chicken stock and butter and simmer for 4-5 minutes
- Cook the spaghetti in a pot of boiling water and add the broccolini about 3 minutes before the spaghetti is cooked
- Drain and toss with the chicken sauce
- Serve with shards of the crisp prosciutto, parmesan and black pepper
