Sweet smoked paprika seasoned chicken fillets served with saut&eacute

  • 4 skinless chicken breasts
  • 1 teaspoon sweet smoked paprika
  • 1/2 teaspoon sea salt
  • 4 large potatoes
  • 25ml olive oil
  • 1 red capsicum
  • 1 green capsicum
  • 1 yellow capsicum
  • 1 clove garlic
  • 1 red onion


  1. Slice the chicken breasts into 3 pieces lengthwise and pound out with a meat mallet until 1/2cm thick
  2. Season with the paprika and salt and set aside
  3. Peel the potatoes, dice into 2cm cubes; blanch in boiling water for 4-5 minutes and then drain
  4. Heat the oil in a large frypan; add the potato and saute until golden
  5. Add the paprika and salt, toss to combine and keep warm
  6. Deseed and finely slice the capsicums
  7. Peel the garlic and onion and slice thinly
  8. Heat the olive oil in a large frypan over a medium heat add the onion, garlic and capsicums, cook slowly until soft and sweet and keep warm
  9. Heat a little more olive oil in a large frypan and saute the chicken until cooked
  10. Divide the potatoes and capsicum mix between 4 serving plates
  11. Top with the chicken and serve
