Watermelon crush

Ingredients
- ½ cup castor sugar
- 300mL water
- 750g watermelon flesh, seeds removed
- 2 tablespoons lemon juice
Method
- Put sugar and water in a saucepan and bring to the boil for 5 minutes then cool
- Puree watermelon flesh in a blender
- Add sugar syrup and lemon juice and mix well
- Put into a tray and place in freezer
- When the mixture starts to set, remove from freezer and blend well or mix it with a fork, then place it back in the freezer
- Remove from freezer 15 minutes prior to serving
- Spoon into serving glasses
