Whiting Ceviche

  • 8 fillets very fresh whiting, sliced
  • Juice from 2 limes
  • Juice from 2 lemons
  • Juice from 1 orange
  • 1 celery heart, chopped
  • 1 small cucumber, sliced
  • 1 red capsicum, chopped
  • 1 red chilli, chopped
  • 1 small bunch coriander, chopped
  • 3 spring onions, chopped
  • 2 ripe tomatoes, skinned, seeded and diced
  • Sea salt
  • Pepper
  • Drizzle of olive oil


  1. Place the whiting in a bowl and cover with the juices, season with salt and pepper and leave for 5-10 minutes
  2. In another bowl mix celery, cucumber, capsicum, chilli, coriander, spring onion and tomatoes
  3. Once the fish is just cooked through, but still a little raw in the middle, add to the other bowl with all the juices
  4. Mix quickly, adjust seasoning and arrange on a plate with a drizzle of olive oil
